I'm not good with words, but this Timorasso is truly an intriguing and unique wine that is unrivaled by other high-quality whites.

I wasn't familiar with this "niche" Timorasso, but I immediately fell in love with it for its fruity and floral aromas and, above all, its remarkable freshness, rich minerality, and subtle vegetal notes. My customers also love it with my spaghetti with battered pesto, my chickpea omelette (without eggs), my tofu sticks with seaweed, and my aged almond-based cheeses (without cow's milk). I'm very pleased with this latest addition to the wine list.

I was looking for a Piedmontese wine that was a little different, so I ordered the Timorasso on the advice of the sommelier, who also recommended the Rugiada del mattino in a chat. We tasted this "Signor Timorasso" in September 2020 directly in the vineyard in Pozzol Groppo. The delightful Paolo Ghislandi himself (founder of I Carpini) abandoned the harvest and led us on a discovery of his natural ecosystem, where he practices holistic organic agriculture based on quality, sustainability, the valorization of biodiversity, and respect for nature and time. This is where ethical, delicious, and clean wines are born that "speak to the soul," like Rugiada del Mattino, with its decidedly original style, a strong and highly expressive character, and a commitment to elegance and drinkability. This is thanks to a "unique vision of the whole" that views the vineyard as a small part of a larger ecosystem, one that demands respect and in which all elements must coexist in harmony, preserving the delicate balance of biodiversity.
