"Shouldn't wine be vegan by definition?"
You are absolutely right and it is no coincidence that you used the conditional " should ".
Wine is a grape-based product, therefore plant-based by definition!
However, not everyone knows that during the winemaking process, ingredients of animal origin can be used, such as casein, albumin, isinglass, bone glue, gelatin, and ox blood, just to name a few of the fining agents permitted by law, which are still used by conventional producers.
The most innovative Italian companies, have abandoned the use of animal ingredients and derivatives, in favor of natural clays, algae and plant proteins , thus guaranteeing a higher quality and ethical nature of the wine they produce.
But that's not all: the non-use of animal products extends to packaging , labels, inks, glues, capsules, containers, adhesive tapes, and everything else that, from the vineyard to the cellar to after-sales, is part of the wine product.

"How healthy could a vineyard treated with chemicals be? What impact would it have on the soil, air, water, and the plant itself? What kind of wine would end up in your glass?"
If you think about it, " Organic is Logical "! Working in harmony with the land, respecting nature, excluding herbicides, pesticides, and synthetic chemicals, with the aim of producing healthier, cleaner, more natural, and conscientiously made wines, should be a normal thing, but we know well that this is not the case!
Organic is a model of sustainable viticulture, with the aim of reducing the ecological footprint of production, avoiding contamination, ensuring full balance with the ecosystem, promoting biodiversity, respecting nature through non-invasive treatments, collaborating with all its elements, enhancing and preserving it with increasingly innovative and sustainable production techniques.
